This mammal, known in Indonesia as Luwak, eats these fruits that it selects one by one with great care selecting only the sweetest and ripest ones. In the digestion phase the grain undergoes a semi fermentation in the stomach of the animal changing the protein structure, thus giving it its characteristic sweet aroma. Then the seed, after a further and careful selection and cleaning, is washed and roasted to obtain the finest coffee.
